These Black Sesame Buns are nutty, bold, and perfectly sweet. Each delicious bite makes me feel like I'm treating my taste buds and hair to something special.

Ingredients - Black Sesame Filling
- 150g ground black sesame (roasted for enhanced flavor)
- 250g water
- 30g glutinous rice flour mixed with 50g water (for thicker consistency)
- 40g butter
- 10g gelatin sheet (soaked)
- Optional: 10g peanut butter
- 80g sugar (adjust according to taste and if using peanut butter)

- 250g all-purpose flour
- 50g ground black sesame
- 140g warm water (adjust as needed)
- 3g yeast
- 10g sugar
Preparation
Step 1 - Prepare the Filling
Soak the gelatin sheet in cold water for 5 minutes. Meanwhile, in a pot, combine the ground black sesame, water, glutinous rice flour water mixture, butter, and optional peanut butter. Cook the mixture over medium heat, stirring constantly, until it thickens. After removing from heat, add the soaked and drained gelatin, mixing well. Allow the mixture to cool slightly, then form it into 30g balls. Finally, freeze the balls for 20 minutes to firm them up.
Step 2 - Prepare the Bun Dough
In a mixing bowl, combine the all-purpose flour, ground black sesame, sugar, and yeast. Gradually add warm water to form a dough, adjusting the amount as needed to achieve a soft, pliable consistency. Cover the dough and let it rest for 20 minutes. Once it has risen, knead the dough until it becomes smooth.
Step 3 - Assemble the Buns
Divide the dough into 60g portions. Roll each portion into a flat circle to create a wrapper. Place a frozen black sesame ball in the center of each wrapper. Then, carefully wrap the dough around the filling, ensuring the edges are sealed properly.
Step 4 - Cook The Buns And Serve
Place each bun seam-side down on a piece of parchment paper, Let sit for 40 min at 30°C(86°F). Steam the buns over medium-high heat for 12-15 minutes, until they are fluffy and fully cooked. Enjoy the buns warm, and remember, you can freeze any extras and re-steam them as needed.
