Spicy fun hand-pull Noodles

Noodles

  • All-Purpose Flour: 200g
  • Salt: 2g
  • Water: 105g (+/-10g, adjust depending on weather and flour type)

Sauce

  • Two ripe tomatoes, finely chopped
  • One medium onion, finely chopped
  • A few cloves of garlic, minced
  • 2 tbsp of Guiz Chili Crisp(either flavor is great, we use original flavor here)
  • Soy Sauce: 5g
  • Sugar: 5g
  • Cornstarch: 5g
  • Water: 50g

Noodle Preparation

Step - Combine Ingredients To Form Dough

In a large bowl, mix the flour, water, and salt with a fork until just combined. Knead the mixture by hand to form a smooth dough. If the dough is too dry or doesn’t form a ball, add a bit more water. If it’s too sticky, add a little more flour.

Step 2 - Prime Dough For Stretching And Pulling

Cover the dough and let it rest for 30 minutes. This allows the gluten to develop, essential for stretchy noodles. Knead the dough until smooth. Roll it into a long cylinder and cut into even pieces. Flatten each piece slightly and soak them in water for at least 30 minutes. This soaking helps in stretching the noodles later.

Step 3 - Stretch And Pull NOodles

Enjoy the process of pulling each noodle to your desired thickness. Boil the noodles until they float to the surface, then rinse in cold water to stop the cooking process and maintain their chewy texture.

Sauce Preparation

Step 1 - Cook The Aromatics

In a pan, sauté the chopped onions and garlic until fragrant.

Step 2 - Add Tomatoes And Season

Stir in the chopped tomatoes and cook until they soften. Combine soy sauce, oyster sauce, chili crisp, sugar, cornstarch, and water. Add this mixture to the pan.

Step 3 - Finish The Sauce and Mix It Well With Noodles

Cook the sauce until it thickens, then toss in the cooked noodles, ensuring they are evenly coated
