Hey noodle lovers! Excited to share another delicious recipe with you - Tian Shui Mian (Sweet Water Noodles), a beloved Sichuan street food. Don't get fooled by the name, like anything from Sichuan, it's going to be SPICY! Follow along for this homemade version of this street food classic!

Aromatic Soy Sauce Ingredients
- Soy Sauce: 250g
- Dark Brown Sugar: 80g
- Cinnamon: 2g
- Star Anise: 1
- Bay Leaves: 2
- Peppercorn: 1g
- Fennel Seeds: 2g
- Ginger Slice: 5g
- Water: 25g
- Cardamom: 1
Noodle Ingredients
- All-Purpose Flour: 200g
- Water: 105g
- Salt: 2g
Other Ingredients
- A tablespoon of sesame oil
- Chopped green onions
- Sesame seeds
- 3 tbsp chili crisp
- 1 tbsp tahini
Preparation
Step 1 - Noodles
Mix the flour, water, salt, and rest the dough for 1 hour. Roll to 2-3mm thickness and cut into 8mm ß(1/3 of an inch) strands. Pro tip: try folding the dough several times before slicing it for extra chewy noodles. This technique enhances noodle texture. Cook in boiling water until tender, then chill in an ice bath.
Step 2 - Sauce
Mix the aromatic soy sauce Ingredients, cook until the mixture reduces to about 2/3 to produce the aromactic soy sauce. Mix 3 tbsp aromatic soy sauce, 3 tbsp chili crisp, and 1 tbsp tahini, put aside and ready to serve
Step 3
Mix the sauce with the noodles, stir well. Add a drizzle of sesame oil, garnish with chopped green onions and sesame seeds. Voilà, enjoy your this delish from Sichuan!
